Meatballs

Make meatballs as a chef, with this recipe you can make lovely meatballs in tomato sauce. Serves four persons on and preparation time is 5 – 8 hours.

Ingredients meatballs

  • 350 gram fresh minced beef
  • 350 gram fresh minced pork
  • 2 cloves garlic
  • Fresh barsley
  • Wild fennel seeds
  • Pepper and salt
  • 1 big fresh egg
  • A handful of parmesan cheese (parmigiano reggano)
  • One slice of white bread
  • Fresh milk in which to soak the bread

Ingredients sauce

  • 10 san marzano tomatoes
  • Extra virgin olive oil
  • 2 clery stalks
  • 6 carrots, chopped
  • 2 onions, finely chopped
  • salt

Preperation of the meatballs

Pre-heat the oven to 190 degrees Celsius. Place a slice of white bread in a bowl of milk. Meanwhile, mix the mince whith the egss, cheese, fennel seeds, parsley, garlic, olive oil, salt and pepper. Finally, add the slice of bread. Knead well and shape into large meatballs. Place in the oven for five minutes.

Preperation of the sauce

Pour some olive oil into a pan and add the celery, carrots, and onions. Leave the ingredients on low heat for ten minutes; take care not to let anything burn. Then add the tomatoes an cook for four to five hours on low heat. Add salt and pepper to taste. Now the meatballs can also be added to the pan. Cook for at least another hour – up to a maximum of three hours. This will make the meatballs nice and tender.

Preparation of the polenta (optional)

Sprinkle finely ground cornflour into boiling water. Stir into a thick mixture. Add a little butter so the polenta does not stick to the pan and season with salt, pepper, and other herbs if desired. Allow the polenta to cool. Spread a little mascarpone over the top with a little parmesan cheese. Let it melt and form a crust naturally.

Ingredients polenta

  • 100 – 150 grams finely ground corn flour
  • 0.5 liter of water
  • Pepper & salt
  • 50 grams butter
  • Mascarpone to taste
  • Parmigiano to taste
